But feeding young children simple seeds can be a tricky business, and some may not like the taste. So adding some to your muffin batter is a good idea. This flaxseed muffins healthy recipe makes 12 low-fat muffins, 194 calories each and 28% of fat (mostly good fats).
Ingredients for flaxseed muffins:
- ¾ cup ground flaxseed
- 1 ¼ cup regular flour
- ½ cup wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup canned pineapple, crushed with juice
- ½ cup unpeeled and chopped apples
- 2 tablespoons cooking oil
- 1 beaten egg
- 2 egg whites
- 1 cup fat-free sour cream
- ¼ cup dark molasses
- ½ cup dried fruits
Whisk together flours, baking powder, baking soda, salt, and flaxseed. Mix the other ingredients in another bowl until light and fluffy, stirring in the dried fruit. Add the flour and flax mixture into a sour cream mixture; do not worry if the texture looks a bit lumpy. Spoon the batter into a greased, lined or oil sprayed muffin pan.
Bake the flaxseed muffins in a 400 degrees F pre-heated oven for 15 – 20 minutes till golden brown.
