This beetroot and tomato soup recipe can brighten up a rainy day and even help overcome the sniffles when it is cold outside. In summer, the tomato and beet soup can be served chilled. Serve this healthy soup chilled as an appetiser to your continental dishes or have it with a sandwich for a light lunch. The soup is heart-healthy, works well with cheese garlic bread and a summer salad.

- 500g tomatoes, quartered
- 1 onion, finely chopped
- 50g beetroot, peeled and roughly chopped
- 2 tsp butter
- 1 tsp cooking oil
- 1 tsp black whole peppercorn
- 1-inch cinnamon stick
- 2 cloves
- 2 green cardamoms
- 3 garlic cloves
- 2 cups water
- ½ cup milk
- Rock salt, to taste
- Fresh cream and chopped coriander (optional)
- Croutons (optional)
Heat butter and oil. Add the whole spices till fragrant. Then sauté the onions and garlic until light brown. Next, add the quartered tomatoes till the skins shrink. Add chopped beetroot, water and salt and cook under pressure for one or two whistles. Adjust water according to your taste. Puree this mixture in a blender. Strain and add the milk, bringing it to a boil, and simmer for 2-3 minutes. Garnish with fresh cream, chopped fresh coriander (cilantro) and croutons. Serve this beautiful, red tomato & beetroot soup with garlic bread and salad.
Garnish with paneer or full cream and a few sprigs of fresh mint (pudina).
